recipe: super simple microwave caramel corn

(do you say care-a-mel or car-mel? :)

i'm pretty sure boredom is the arch enemy of my appetite.
well, boredom AND pinterest.
(ya, i've said that before, and i'm sure i will again!)

so i poked around in my kitchen the other day..
trying to figure if i had ingredients for ANYTHING..
i flipped through my recipes binder & my cook books..
then i stumbled on this recipe.
it's from the same cookbook that brought you mayonnaise rolls.
i'm telling you. southern women can cook & that's not to say i think northern woman can't.
it's just.. well c'mon, tell me you don't know a southern mama that isn't known for some good cookin'.
i can't. they may not be gourmet cooks, but they certainly hold their own weight.
hell, look at paula deen. she's a southern cooking empire.
(and we all know the hubs is head over heels for mrs. deen)



SO. this recipe comes from a charity cookbook i have in my possession thanks to my husbands aunt in georgia.  
(i'm really beginning to like this cookbook. it has easy recipes & ingredients i can FIND, which is always a plus)

microwave caramel corn

-7 large marshmallows
-1/2 cup brown sugar
-1 stick butter (1/2 cup)
-1 tsp vanilla
-3 quarts popped popcorn



1. combine marshmallows, sugar, butter & vanilla in microwave bowl. cook 2 1/2 minutes.


2. stir after cooking until marshmallows are melted. i ended up using a whisk to help break up the bits of marshmallow. cook 30 seconds more.


3. spread popcorn out on baking sheet lined with foil.


4. pour marshmallow mixture over top of popcorn, using forks to combine.



enjoy the ooey gooey goodness!

the best part of this caramel corn is it doesn't get hard like the regular stuff does.
(translation: easy on the teeth)
even after a few hours it stays soft & chewy, but the popcorn doesn't get stale.
i sprinkled a little salt over the top of mine afterwards..
but i used unsalted butter, so that may make a difference.
it was SO good...
which of course means it was gone by the next day :)
