recipe: creamy (no bake) mints

this is one evil jar of goodness.
(how's that for a contradiction)


what are they you ask?
well they are creamiest, easiest, most delicious mints you can possibly imagine!

when i saw this recipe on in the kitchen's blog  last month i KNEW i had to try it.
4 ingredients & mint flavored?
right up my alley.
but it's taken me a month to get all the ingredients together in the house...
(i should know by now to take lists with me to the store!)


the recipe calls for 4 1/4 to 4 1/2 cups of powdered sugar..
i only got 4 cups in & it started to become a little crumbly..
i'm going to decrease it next time..
(there will most definetly be a next time!)

i left out the green food coloring her recipe calls for..
which may account for some of that.
i poured it out on a cutting board & mashed it all together
then made inch sized balls out of the dough..
& smashed them with a fork like you would a peanut butter cookie


don't they look delicious?
i used peppermint extract, eventhough the recipe called for mint.
they taste pretty close to the inside of a peppermint patty..
(my favorite candy...)


the hubs tried them & said they'd be good dipped in chocolate..
little does he know i have a few little balls set aside just to try that..
(i just need the chocolate first!)
because if they already have 4 cups of sugar, you may as well finish them up right, right?

i slightly modified it to my taste..
here is my version.

creamy no bake mints:
-3 oz cream cheese (works better at room temp)
-4 cups powdered sugar (add slowly, you may need less)
-1/2 tsp peppermint extract

-beat cream cheese & peppermint extract together. slowly add in powdered sugar, stopping when dough gets stiff. it takes a bit to get 4 cups of sugar into 3 oz of cream cheese, so be patient & scrape the bowl often!

the good thing is they are so sweet ya can't really eat more than one at a time.
i have mine in this little container in the fridge...
& they are kinda calling my name right now...
